I have to confess that when I proposed to Jake and Kara that we work on a breakfast recipe with bacon cheeseburger flavors, they were skeptical. And our first attempt was definitely not a keeper. But we persevered and had the idea of making it into a quiche so the bacon and ground beef flavors were a bit more concentrated, and we loved this Bacon Cheeseburger Keto Breakfast Quiche!

And as I reminded Jake and Kara, people love bacon cheeseburgers, right? That’s why so many people eat them often, and why Low-Carb Grilled Bacon Cheeseburger Meatballs have been such a big hit on the site.

How to Make Bacon Cheeseburger Keto Breakfast Quiche:

  1. Preheat over to 350F/175C.
  2. Cook thick bacon until it’s really crisp, then crumble into the bottom of your quiche pan, saving a little bacon to sprinkle on the top.
  3. Then in the same frying pan, cook one pound of ground beef until it’s well-browned. (You can remove some bacon fat if it seems like too much, but use the bacon fat to cook the ground beef.)
  4. While the beef cooks, finely chop up 1/2 an onion and 1/4 cup finely diced dill pickles.
  5. Put the cooked ground beef over the bacon and sprinkle the onion and pickles over the beef.
  6. Sprinkle one cup (or more) of grated cheese over the top of the other ingredients.
  7. Beat 8 eggs with cream or half and half, then pour that over the ingredients and gently “stir” with a fork so they’re well combined.
  8. Sprinkle the reserved bacon and the other 1/4 cup grated cheese over the top.
  9. Bake 35-45 minutes, or until the quiche is completely set, cheese is melted and the top is nicely browned.

Bacon Cheeseburger Keto Breakfast Quiche has those bacon cheeseburger flavors everyone loves, and this is delicious for a crustless quiche meal any time of day.


  • 8 slices thick bacon
  • 1 lb. ground beef
  • 1/2 onion, finely chopped
  • 1/4 cup dill pickles, finely chopped
  • 1 1/4 cup grated cheese (see notes)
  • 8 eggs, well beaten
  • 1/2 cup heavy cream (see notes)


  1. Preheat oven to 350F/175C. Spray a  9 inch or 9.5 inch glass or crockery pie pan with non-stick spray. (Probably optional, but it makes the dish easier to clean.)
  2. Heat a large frying pan over medium-high heat and cook the bacon until it's nicely crisp. Remove bacon to a cutting board or plate to cool, then crumble the bacon.
  3. Reserve a little bacon to sprinkle over the top and put the rest of the crumbled bacon into the pie pan.
  4. Remove some of the bacon fat from the pan if needed, then heat the bacon fat left in the frying pan over medium-high heat. Add the ground beef to the pan, breaking it apart with your fingers. Cook until the beef is completely cooked and starting to brown, breaking it apart with the turner as it cooks.
  5. Add cooked ground beef to the pie pan.
  6. While beef cooks, finely chop 1/2 an onion and 1/4 cup dill pickles. Sprinkle chopped onion and pickles over the ground beef.
  7. Sprinkle the one cup grated cheese (or more) over the ingredients in the pie pan.
  8. Beat the eggs until they're well-combined, then beat in the cream. Pour the egg mixture over the other ingredients and gently "stir" with a fork, so ingredients are well-combined.
  9. Sprinkle the rest of the grated cheese and the reserved bacon over the top.
  10. Bake 35-45 minutes, or until the quiche is completely set, the cheese is all melted, and the top of the quiche is nicely browned. Serve hot.


We used a blend of cheeses but any cheese that would be good on a bacon cheeseburger will work. Use a little more cheese if you prefer. Use half and half instead of heavy cream if you prefer.
