I’ve been waiting months for it to be August 1, and by the time you read this I’ll either be on a plane flying to Seattle or already on a cruise ship headed for Alaska! I’m excited to visit a part of the world I’ve never seen, and relaxing on the ship will be my main plan for the next week. I’m not sure how well I’ll keep up on comments on the blog and on social media, so if you don’t get an answer as quickly as usual I’ll catch up on that when I get home.
I’ve been working hard so I could leave you a round-up of enticing recipes to explore while I’m gone, and I’m thrilled with the variety of dishes I found for this month’s collection of 25 Deliciously Healthy Low-Carb Recipes. Zucchini Noodles with Slow Roasted Tomatoes and Cream from Proud Italian Cook. (Low-Carb, Gluten-Free. This has butter and cream, both of which aren’t officially approved for South Beach Phase One, but there’s not a huge amount per serving and I’d eat this for an occasional treat.)
Thai-Inspired Mahi Mahi from Cooking on the Weekends. (This recipe has the tiniest amount of sugar which you could omit; otherwise it is Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.)
Eggplant Parmesan Stuffed Zucchini Boats from The Iron You. (Made with almond meal: Low-Carb, Gluten-Free, Paleo, Whole 30. I would eat this for South Beach Phase One, but almond meal is not officially allowed for that phase.)
