It’s April Fools Day and that’s no joke!  I’m always surprised how the months seem to whiz by, and again this month in Utah we’ve had unusually warm weather and practically zero snow or rain.  As nice as it feels, I know that can’t be good.  Yesterday I was having lunch with some Utah blogging friends and we talked about the poor ski resorts who’ve had to make snow for months now just to stay in business.

I know, if you live on the East coast you’re not feeling a bit sorry for us.  But I did notice in the assortment of recipes for this round-up there are more salads and marinated vegetable dishes and far fewer soups and stews than a few months ago, so summer can’t be far away now!  And just in case anyone is trying to lose a few pounds before it’s bathing suit weather, possibly some of these tasty low-carb recipes can help.

Roasted Asparagus and Avocado Salad with Lemon-Parmesan Vinaigrette from Completely Delicious.  (Low-Carb, Gluten-Free, South Beach Phase One.  The dressing used here has a little honey, but with an approved dressing this could easily be Paleo or Whole 30.)

Pressure Cooker Corned Beef with Creamy Horseradish Sauce from Kalyn’s Kitchen.  (Low-Carb, Gluten-Free.  I would eat this for South Beach Phase One as an occasional treat, but corned beef isn’t recommended for South Beach due to the fat content.)

Leftover Corned Beef Low-Carb Reuben Bake from Kalyn’s Kitchen.  (Low-Carb, Gluten-Free.  I would eat this for South Beach Phase One but it’s definitely a once-in-a-while treat due to the fat content.

Mushroom Ceviche from Skinnytaste.  (Low-Carb, Gluten-Free, South Beach Phase One, Paleo, Whole 30.  The recipe has 1/4 teaspoon of honey in three servings, which I consider not enough to count.)

Flank Steak with Romesco Sauce from Southern Boy Dishes.  (Low-Carb, Gluten-Free, South Beach Phase One.  The marinade has one tablespoon of honey which I wouldn’t worry about since you only eat the small amount that sticks to the meat.  If you omit honey this is Paleo and Whole 30.)
