I’m overdue for another edition of Things I’m Thinking About, so here’s a bit of quick news!

Let’s start out with the big news! Sorry to yell out the name in the headline of this post, but by the time most of you read this I’ll be on a plane on the way to Thailand, where I am traveling with friends for two weeks. We’re going on a tour that starts in Bangkok, then goes to Ayutthaya, Sukhothai Historical Park, Chang Rai, The Golden Triangle, and Chang Mai. Needless to say, I am pretty excited!

And I’m not even making it to all of the 15 Places You Must See in Thailand, so I’ll probably have to make a return visit someday.

I have some posts ready or scheduled for the blog while I’m gone, but it will be a bit quieter than normal, and answers to comments and replies on social media will probably not be as prompt as usual. If you want to see what I’m doing on my trip, you can follow me on Instagram, where I’ll be sharing lots of photos!

The other big piece of news since I shared one of these posts is that there’s a new mobile-responsive design for Slow Cooker from Scratch! Now finding healthier slow cooker recipes just got a lot easier, especially if you’re standing at the grocery store looking at your phone and wondering what to cook.

Of course I’m excited about trying the food in Thailand, since I’ve loved the Thai food I’ve had in the U.S., although I know that what I’ve had here is Thai-American food to be sure. I’ve been reading up on authentic Thai food, and this list of Ingredients Used in Thai Cooking looks intriguing.  And my friend Mary gave me Thailand: The Cookbook (pictured above) and I’ve spent hours poring over the unusual recipes pictured in the book.

How to you feel about limiting fat in your food? Sometimes people ask me if I’m still following South Beach, and the answer is, yes and no. For sure The South Beach Diet has permanently affected my way of eating and I’m always focused on making carb-conscious choices for a healthy diet. But one thing I’m less of a believer about now is the rules South Beach has about low-fat ingredients, and especially low-fat dairy.

If you follow nutrition research, there’s more and more evidence that Full-Fat Dairy Might be Healthier, and here’s a good read on The Case Against Low-Fat Milk if you’d like to read more.

Have you joined the Fit Bit craze yet? I’m working on it, so I was interested in this post about 10 Ways to Get 10,000 Steps a Day. (And I keep forgetting to put mine on in the morning; maybe I should have gotten the bigger one!)
I stumbled on this post by my friend Carolyn about The 12 Best Vegetables for a Low-Carb Diet. and thought it was full of good information. Worth a read!
